Vietnamese Chicken Meatballs

These meatballs are quick & easy to prepare, and full of the flavours of Vietnam.

Ingredients:

☐  500g Chicken Mince

☐  1 Egg, lightly beaten

☐  ¼ cup Panko Breadcrumbs

☐  2 tsp minced Garlic

☐  1 tsp grated Ginger

☐  1 tsp minced Lemongrass

☐  3 Spring Onion, finely sliced

☐  1 long Red Chilli, finely sliced

☐  ¼ cup chopped fresh Coriander leaves

☐  Salt & Pepper to taste

Method:

  1. In a large bowl, combine chicken mince, garlic, ginger, lemongrass, finely chop red chilli and chopped coriander.
  2. Take 1-2 heaped tablespoons mince mixture and roll into the shape of your choice – round meatballs, flat patties, or long sausage shaped logs. Refrigerate for at least an hour to firm.
  3. In a fry pan on a medium to hot flame, roll the meatballs around to fry all over (if round) fry the meatballs on both sides for burgers, sliders or patties, until golden and cooked through.
  4. Serve with salad & sweet chilli sauce.

Notes:

  1. You can buy some nice Asian-style prepackaged salads from the supermarket that go well.
  2. Make small, bite size meatballs served on toothpicks to dip in sweet chilli sauce as an hors d‘oeuvre. or snack.
  3. I use mini meatballs as the protein in my Rice Paper Rolls, a fun fresh meal for friends and family; bahn mi style long rolls; brioche buns or sliders for burgers.
