Healthy Hollandaise Sauce

Hollandaise sauce uses lots of butter and egg yolks to get a rich, smooth and creamy texture. This recipe gives you a remarkably similar result without the calories!

Ingredients:

☐ 1 medium ripe Avocado

☐ 1 Lemon

☐  ¼ – ½ tspn Cayenne Pepper

☐  Salt & Pepper to taste

☐ ½ cup Water

Method:

  1. Scoop out the flesh of the avocado and place it in a ‘Nutribullet’-style blender with the juice from the lemon, cayenne pepper, salt, pepper and ¼ cup water (hot water if you are serving it straight away).  
  2. Taste and adjust the seasoning & spice to your liking. Add additional water until you achieve the desired consistency.
  3. Refrigerate until needed – sauce will keep for about 3 days.
  4. Use on eggs benedict, scrambled eggs, grilled chicken, veges such as broccolini, wilted spinach or asparagus.
