Mario’s Cucumber & Onion Salad

Cucumbers are a low-calorie vegetable that can be a valuable addition to your diet. They offer a refreshing and guilt-free snack option and cucumbers are a versatile and are a nutritious choice for maintaining a healthy diet. My mum (fondly referred to as ‘Mario’ by her children & grandchildren) used to make this up for a quick and easy addition to go with cold meat and other salads. Any leftovers would be kept in a container in the fridge and used to make a sandwich on fresh bread. Delicious & refreshing!

Mario’s Cucumber & Onion Salad

Ingredients:

☐ 1 Continental Cucumber or 3 Lebanese Cucumbers (approx 400g in total)

☐ 1 Red Onion

☐ 3 tbsp Champagne Vinegar (this can be substituted with Brown Vinegar)

☐ Pinch of Salt

Method:

  1. Use a fork to score the cucumber – drag it down the full length of the cucumber, top to bottom, this is an aesthetic thing. You can use a teaspoon to scrape out the seed if you want to reduce the amount of cucumber liquid (juice) released.
  2. Cut the cucumber into discs, or halve down the centre, length ways, then de-seed and slice each half into semi circles about 2mm thick.
  3. Cut the onion in quarters, then slice the same thickness as your cucumber.
  4. Mix the vinegar and salt and pour over the salad. Let it sit for half an hour to absorb the dressing, toss to coat in the vinegar. Serve as a side salad.

Notes:

Chop up some fresh herbs such as dill, parsley, chives, basil or coriander to sprinkle over the top and add some extra flavour, or crumble feta and chopped red capsicum over the top.
