Poached Chicken
A healthy way to increase your protein intake, simply add this to your salad or meal. On its own, it’s quite bland, so perfect to add to other flavours to add some ‘lean protein’. Use In: Chicken Mousse, Mexican Chicken, Enchiladas, add to Salads or Pasta, or substitute for chicken in any recipe you are cooking.
Ingredients:
☐ 4 x 350–400g Skinless Chicken Breast
☐ Water
Optional:
☐ 2 slices Lemon or Lime
☐ 1 Bay Leaf
Method:
- Place chicken breasts in a saucepan of water over a high flame and place the lid on. Add bay leaf, lemon or lime slices, if using. Bring to a boil, then turn the flame off and leave on the stove for a minimum of 20 minutes leaving the saucepan lid on – 20 minutes for smaller breasts, longer for larger (30-40 minutes).
Slice, dice, puree to prepare them for the recipe you are adding them to! Flavours can be added now the chicken is cooked. See notes for recipe ideas using poached chicken

You can use these to put in salads, add to pasta and rice dishes, sandwiches and wraps, Chicken Mousse (for animals or humans), a healthier way to use chicken in anything you would would normally buy a BBQ Chook for.
