Rice with a Kick!

If you like it spicy, this is great side, or additional topping for Burritos. Make it to suit your own spice palette. It creates a mouth-watering aroma in the kitchen that you look forward to dinner! Pork Medalions are great served with this rice.

Vietnamese Salad

I eat this almost every week of the year, sometimes all week! You can prepare all the veges and store them in small containers in the fridge, then put it together the morning you’re going to have it, all the hard work is done. Or you can make them on Sunday for the coming week, makes 4 serves – but take the dressing in a separate container to add just before you are going to eat it so it doesn’t go soggy. You can halve the recipe if you want to have something different a couple of days of the week. We usually make up two salads, 4 serves of this one and 4 serves of a different one (two each), for the week and have one ‘tuckshop’ day on Friday, to add a bit of variety to the week’s lunches!

Raspberry Mousse

Mousse means ‘foam’ in French and is generally a light consistency as it incorporates air for its soft, creamy texture. This light and fluffy raspberry mousse can be made with fresh, juicy raspberries, or frozen raspberries. You can’t use light/reduced fat cream as it needs the fat content to whip and hold air bubbles. For a healthier option, you can substitute the cream for plain Greek yoghurt. You can see from the Nutrition labels below, there’s a significant difference!

Mario’s Cucumber & Onion Salad

Cucumbers are a low-calorie vegetable that can be a valuable addition to your diet. They offer a refreshing and guilt-free snack option and cucumbers are a versatile and are a nutritious choice for maintaining a healthy diet. My mum (fondly referred to as ‘Mario’ by her children & grandchildren) used to make this up for a quick and easy addition to go with cold meat and other salads. Any leftovers would be kept in a container in the fridge and used to make a sandwich on fresh bread. Delicious & refreshing!

Tropical Fruit Sorbet

This is a great one to have on hand and keep in the freezer. Just take out the number of servings you require and serve them up with your protein, – voila, veges, done in no time!
