Ingredients:
☐ 500g Chicken Mince
☐ 1 Egg, lightly beaten
☐ ¼ cup Panko Breadcrumbs
☐ 2 tsp minced Garlic
☐ 1 tsp grated Ginger
☐ 1 tsp minced Lemongrass
☐ 3 Spring Onion, finely sliced
☐ 1 long Red Chilli, finely sliced
☐ ¼ cup chopped fresh Coriander leaves
☐ Salt & Pepper to taste
Method:
- In a large bowl, combine chicken mince, garlic, ginger, lemongrass, finely chop red chilli and chopped coriander.
- Take 1-2 heaped tablespoons mince mixture and roll into the shape of your choice – round meatballs, flat patties, or long sausage shaped logs. Refrigerate for at least an hour to firm.
- In a fry pan on a medium to hot flame, roll the meatballs around to fry all over (if round) fry the meatballs on both sides for burgers, sliders or patties, until golden and cooked through.
- Serve with salad & sweet chilli sauce.
Notes:
- You can buy some nice Asian-style prepackaged salads from the supermarket that go well.
- Make small, bite size meatballs served on toothpicks to dip in sweet chilli sauce as an hors d‘oeuvre. or snack.
- I use mini meatballs as the protein in my Rice Paper Rolls, a fun fresh meal for friends and family; bahn mi style long rolls; brioche buns or sliders for burgers.
