Ingredients:
☐ 170g 70% Dark Chocolate
☐ 30g Sugar Substitute (eg. Monk Fruit, Equal, etc)
☐ ½ tbsp Cocoa Powder
☐ 6 large Egg Whites, at room temperature
☐ 30g Caster Sugar or Artificial Sweetener, such as equal or monk fruit
☐ 1 large Egg Yolk
☐ Pinch of Salt
☐ Extra milk chocolate, chopped, grated or small chocolate buttons
Method:
- Melt the chocolate with the cocoa powder in a bowl over a saucepan of simmering water, or a double boiler if you have one. Take it off when the chocolate is almost melted, continue stirring until completely melted.
- Whisk the egg whites and sugar together in an electric mixer until strong peaks form (like a meringue mixture).
- Continue to whisk and add the egg yolk and salt.
- Slowly pour the melted chocolate into the whisked egg whites and gently fold (ensuring the aeration remains and the mixture remains light and fluffy) until completely mixed together.
- Spoon or pipe into small serving bowls and refrigerate for at least 2 hours to set. If longer, drape a sheet of glad wrap over the top to protect them.
- To serve, top with sliced strawberry, raspberry, cherry, whatever takes your fancy!
Notes:
You can change it up and add other flavours. I’ve experimented with:
- Freeze-dried Raspberry (you can buy many different types of fruit in this fashion)
- A dollop of Salted Caramel Sauce in the bottom
- A tablespoon of Rose Water, for lovers of Turkish Delight
- Chopped up chocolate flavours mixed in or on top– Caramilk is my favourite!
- A shot of Espresso
- Chopped up Banana Lollies
- Chopped up Jersey Caramel
